Greek recipe:
Meat-Other Greek island salad with chicken & avocado
Preparation time: - Cooking time: 30 to 40 minutes
Serves: This salad with avocado and chicken can serve up to 6 people.
List of Ingredients:
1.8kg Chicken (roasted at normal temperature)
Romaine lettuces-2
Tomatoes-4
Spring onions-3
Ripened avocados-2
Lemon juice-3 tbsp, plus additional for squeezing
Feta cheese-200g packet
Dried oregano-1/2 tsp
Dried mint-1/2 tsp
Flatleaf parsley half bunch
‘Extra-virgin olive oil’-5 tbsp
Kalamata olives (black)-2 tbsp
To serve- Use pitta bread.
How to cook:
Step 1: Pull meat from chicken shredding it roughly. Now trim each lettuce base and wash. Dry these leaves and shred them roughly. Cut tomatoes in the shape of wedges. Then slice spring onions finely. Cut avocados lengthwise half and remove peel and stones. Cut into slices then squeeze lemon juice. Now crumble with fingers feta cheese and toss with mint and dried oregano. Pick leaves of parsley setting it aside.
Step 2: Whisk lemon juice-3 tbsp with olive oil, pepper, and sea salt. In large basin, toss chicken, spring onions, tomatoes, and lettuce, now fold dressings three quarters with avocados. Season with pepper, salt, and scatter over feta, parsley and olives, and drizzle along with remaining of dressing. Squeeze on top additional lemon juice. For serving, use pitta bread.
