Scandinavian Recipe: Meat_ pork Danish Pork Tenderloins

Ingredients list:

Dried prunes – 12
Pork tenderloins – 2
Salt
Pepper
Tart apple – 1, these have to be chopped
Water – ¾ cup
Cold water – ¼ cup
Flour (all-purpose) – 2 tbsp

How to prepare:

Step 1) – The first thing to do in the preparation of this dish is to cook the prunes. Use sufficient quantity of boiling water for this purpose. Do this for about five minutes. Drain them and the pits have to be removed. Lengthwise cut the tenderloins (almost cut to half). Sprinkle the sides that have been cut using pepper and salt. Half quantities of apple and prunes have to be placed at the centre of the each tenderloin side. Cover using other side and fasten using metal skewers. Place using string. Place them onto a rack in a roasting pan. Roast the pork at 325 d Fahrenheit. Use a thermometer to adjust the heat. It will take about 90 minutes to roast them.

Step 2) – Place this pork to a warmed platter and keep them warm. Add water to the roasting pan and stir so that the browned bits loosen. Pour to a saucepan and heat to boil. Take a container that is tightly covered and shake the flour and water in it. Gradually stir to drippings. Heat to boil. A constant stirring is required. Add the required quantities of pepper and salt. Boil now and stir for about sixty seconds. Cut the pork to slices and serve along with gravy.
