Scandinavian Recipe: Fish

Boiled Crayfish with Dill

Serves: This dish can serve up to 4 people.


Ingredients List:

Louisiana crawfish or crayfish-6 pounds
Coarse-sea salt-2/3 cup
Sugar-3 tbsp
Dark beer-3 bottles
Fresh dill-1 bunch + Extra sprigs for garnishing
Lemon wedges
Thin slices of white bread and mayonnaise (optional)

How to cook:

1. This dish is easy to prepare and not time consuming at all. The first thing to do is to put crayfish in sink under running water in order to ensure that the crayfish is alive or not. Make sure to discard crayfishes which do not budge.

2. The second thing to do is to combine the following ingredients: dill, beer, sugar, salt, and two gallons of cold water in a pot. Proceed to boil this mixture over high flame, now add in crayfish and bring the mixture to boil once again. Move on to turn the heat off and allow the mixture to stand for 1 or 2 hours, prior to serving them.

3. Now drain crayfish and decorate them on a serving plate, proceed to garnish them with little bit of lemon juice and dill. Move on to crack open crayfish shells and remove the meat from it carefully. Proceed to place meat on the white-bread and spread the mayonnaise over it.

4. Finally, divide this dish among the four serving plates and proceed to serve.
