Bay-Scallop Po' Boy with Spicy Mayo

Ingredients List:
1/3 cup of light mayonnaise
1 minced garlic clove
1 tablespoon of freshly squeezed lemon juice
lemon wedges (for serving)
3/4 teaspoon of paprika
ground pepper
Coarse salt
Hot sauce, to taste
1/4 cup of plain dried breadcrumbs
1 tablespoon of all-purpose flour
1 pound of patted dry bay scallops
1/2 cup of vegetable oil (such as safflower)
4 hot dog buns
4 lettuce leaves

How to cook:

1. Combine the mayonnaise, lemon juice, garlic, teaspoon of paprika, and the hot sauce together in a small bowl. Season with pepper and salt and then set aside.

2. Combine the flour, breadcrumbs, and the remaining 1/2 teaspoon of paprika together in a medium bowl. Season with salt and pepper, then add the scallops and toss to evenly coat.

3. Heat the oil over medium-high in a medium skillet. Fry the scallops in 2 batches while tossing occasionally until cooked through and golden. Transfer the scallops into a paper-towel lined plate using a spoon.

4. Divide the buns equally and spread the spicy mayo inside, then top with lettuce leaf and scallops. Serve immediately with lemon wedges.
